Mexican Inspired Quinoa Salad

Truly the best quinoa salad I’ve tasted.  And that’s not just because I made it 🙂

I ate this for dinner the other night after a good workout at the gym and was very satisfied. Great topped with a sliced avocado.

Ingredients:

1/2 cup quinoa
1 cup water
2 tbsp. olive oil
1 can of black beans (rinsed and drained)
1 tomato chopped
1/2 lemon
2 cloves garlic minced
1/2 white onion chopped
1/2 jalapeno chopped
salt and pepper

Directions:

Cook quinoa according to package (usually with one cup of water for about 15 min.).  In a medium saucepan, sautee olive oil, garlic, and onions for about 5 min.  Add black beans, jalapeno, salt and pepper to taste. Continue to cook on low for a few minutes.  Add tomato, juice of half a lemon, and quinoa.  Sautee for 2  minutes until all of the flavors have marinated.

 

It’s that easy.  Enjoy!  

For a quicker version, just add salsa, black beans, and quinoa heated together.
