Two Healthy Products From Pumpkin Carving Leftovers

Wondering what you can do with the inside of your pumpkin after you finishing carving your pumpkins with the kiddos?

How about a healthy snack and a nutrient packed facial.  So simple and easy you’ll want to make these every year…

To get started:

When cleaning your pumpkin out to carve keep all of the insides in a bowl.  Pick the seeds out and place in a strainer. Wash well and let dry for at least a couple hours or pat dry with a towel.IMG_20131026_151608

While your seeds are drying you can work on your facial.

All Natural Pumpkin Mask :

Easy peasy,  just place all of the inside string gunk in your food processor and blend until nice and smooth.  Add  a 1/2 cup. of raw honey to help it stick to your face.  Spread a good amount on your face and let set 10  minutes before washing off.   Try to pat it to keep it on and keep your movements to a minimum .  Add a little more honey if needed.  Place leftover in an air tight container and in the fridge for up to five days.

Roasted Pumpkin Seeds:

Once your seeds are dry place them in a bowl and drizzle with 2 tablespoons of olive oil or melted coconut oil.  You can play around with seasonings and make it a sweet or spicy snack, but my favorite recipe is as follows:

1 tbsp. Honey
1 tbsp. coconut sugar
1/2 tsp cinnamon
1/8 tsp. Nutmeg
1/4 tsp. Sea salt

You may need more or less of the ingredients based on how many seeds you have in your bowl.  This recipe is based on one medium pumpkin and about a cup and a half of seeds.  Be sure everything is well coated and season it to taste.

Benefits of roasted pumpkin seeds:

  • High in magnesium
  • Good source of zinc
  • Good source of omega 3s
  • Good source of tryptophan

These nutrients contribute to restful sleep, have  anti-inflammatory and anti- diabetic effects, improve the immune system, and promote heart and liver health.

Bake on 350 for about 10 minutes.  Stir them up, trying to keep them spread out as much as possible.   Adding a little more olive oil if they seem to be sticking to the pan and put them in for 3-5 more minutes. Keep an eye on them because they can go from finished to burnt quickly!
